Cauliflower Mashed

A Great substitute for Mashed Potatoes
Makes 4 servings


Ingredients

1 head of cauliflower cut into florets
¾ cups of water
1 tablespoon cornstarch
1/3 cup Skim Milk=low fat version or 1/3 Heavy cream=decadent version
¾ teaspoon salt
¼ teaspoon white pepper
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
½ cup chopped red onions
Non stick spray butter

Directions

1. Steam cauliflower pieces over boiling water for 20 minutes or until cauliflower is tender
2. Drain cauliflower.
3. While cauliflower cools, flash fry onion with non-stick butter spray, Cook until onions become tender, place to the side
4. Place cauliflower and ½ cup water into processor, turn on high speed and puree until cauliflower is almost smooth leaving a few chunks.
5. Dissolve the cornstarch in ¼ cup of water.
6. Pour the cauliflower into a sauce pan, add cornstarch mixture, milk, salt, pepper, garlic, onion powder and onions.
7. Turn heat to medium, stirring often for up to 10minutes or until thick.
8. Approximately 74 calories and less then 2 grams of fat per serving for the low-fat version of the recipe.
