Quinoa
& Heirloom Tomato Salad
Makes 4 servings (1/2 cup each)
Serve as the perfect side dish with a piece of Halibut or as a complete lunch
dish.
Ingredients
2 cups cooked quinoa (room temperature)
2 cups chopped Heirloom tomatoes (off season use regular tomatoes)
¼ cup chopped green onion
½ cup pine nuts
5 large basil leaves chopped
4 tablespoons virgin olive Oil
2 tablespoons crushed garlic
5 turns of cracked black pepper
Directions
Mix olive oil, pepper and garlic together.
Coat tomatoes, onions and pine nuts in with garlic mixture in a large bowl.
Cover bowl and
place in refrigerator over night.
Add quinoa to bowl and toss tomato mixture thoroughly over quinoa.
Toss basil with tomato and quinoa and serve.
