Ingredients
4 - 8 inch whole wheat flour tortilla
1 can of black beans rinsed and drained
1 seeded jalapeno chili pepper finely chopped (omit if you do not desire a
spicy flavor)
1 cup of sweet red pepper
2 tablespoons chopped cilantro
2 tablespoons of Italian dressing
½ teaspoon of black pepper
½ cup of light mayonnaise (made with egg whites)
Romaine lettuce
Directions
1. Wrap tortillas in foil and place in oven for 10 minutes
2. Place beans, jalapeno, red pepper, cilantro, Italian dressing, and black
pepper into a mixing bowl and toss till everything is equally coated with
Italian dressing.
3. Remove tortillas from oven.
4. With a fork, lightly mash bean mixture, till beans are slightly softened.
5. Evenly spread mayonnaise onto tortillas.
6. Place 1-2 lettuce leaves on tortillas.
7. Evenly distribute bean mixture onto tortillas. Roll Tortilla and enjoy!
